Chiles en nogada is a Mexican dish of poblano chiles stuffed with picadillo (a mixture usually containing minced meat, aromatics, fruits and spices) topped with a walnut-based cream sauce called nogada, pomegranate seeds and parsley; it is typically served at room temperature. Zócalo is the common name of the main square in central Mexico City. Prior to the colonial period, it was the main ceremonial center in the Aztec city of Tenochtitlan. The plaza used to be known simply as the Plaza Mayor (“Main Square”) or Plaza de Armas (“Arms Square”), and today its formal name is Plaza de la Constitución (“Constitution Square”).   read more…

Huevos rancheros (‘ranch-style eggs’) is a breakfast egg dish served in the style of the traditional large mid-morning fare on rural Mexican farms. Huevos divorciados (‘divorced eggs’) are simply two eggs served in the same style as huevos rancheros but with a different sauce for each egg – usually a salsa roja and a salsa verde.   read more…

The Ferrocarril Chihuahua al Pacífico (Chihuahua–Pacific Railway), also known as El Chepe from its reporting mark CHP, is a major rail line in northwest Mexico, linking the city of Chihuahua to Los Mochis and its port, Topolobampo. It crosses the Sierra Madre Occidental, part of the range that in the United States is called the Rocky Mountains. There is no road covering the trajectory.   read more…

The Gulf of Mexico (Spanish: Golfo de México) is an oceanic basin and a marginal sea of the Atlantic Ocean, mostly surrounded by the North American continent. It is bounded on the northeast, north, and northwest by the Gulf Coast of the United States; on the southwest and south by the Mexican states of Tamaulipas, Veracruz, Tabasco, Campeche, Yucatán, and Quintana Roo; and on the southeast by Cuba. The coastal areas along the Southern U.S. states of Texas, Louisiana, Mississippi, Alabama, and Florida, which border the Gulf on the north, are occasionally referred to as the “Third Coast” of the United States (in addition to its Atlantic and Pacific coasts), but more often as “the Gulf Coast”.   read more…

The Palacio de Bellas Artes (Palace of Fine Arts) is a prominent cultural center in Mexico City. It has hosted notable events in music, dance, theatre, opera and literature in Mexico and has held important exhibitions of painting, sculpture and photography. Consequently, the Palacio de Bellas Artes has been called the “Cathedral of Art in Mexico”.
