Pasta asciutta or pastasciutta (Italian for “dry pasta”) is a type of pasta preparation in Italian cuisine in which the pasta is drained after cooking and then processed, in contrast to pasta in brodo, where the pasta is cooked in broth and eaten as a soup. The term is used regardless of the type of pasta used and, in Italian menus, distinguishes pasta dishes from soups (Italian for minestre) in the primi piatti. The term minestra asciutta (Italian for “dry soup”) is therefore sometimes used as a synonym. The term pasta asciutta emerged at the beginning of the 20th century. Until then, the word maccheroni was used as a generic term for “dry pasta.”   read more…
