Pasta asciutta or pastasciutta (
Italian for “dry pasta”) is a type of pasta preparation in
Italian cuisine in which the
pasta is drained after cooking and then processed, in contrast to pasta in brodo, where the pasta is cooked in broth and eaten as a soup. The term is used regardless of the type of pasta used and, in
Italian menus , distinguishes pasta dishes from soups (Italian for
minestre ) in the primi piatti. The term
minestra asciutta (Italian for “dry soup”) is therefore sometimes used as a
synonym . The term
pasta asciutta emerged at the beginning of the 20th century. Until then, the word
maccheroni was used as a generic term for “dry pasta.”
In Italy, there are annual public dinners under the motto “Pastasciutta antifascista” to commemorate the collapse of fascism in Italy on 25 July 1943 . In addition, Italian fascists considered pasta un-Italian and therefore despised it. Rice was preferred instead. Eating a portion of pasta was therefore considered an act of resistance.

Especially in the 1970s,
spaghetti with a special tomato and meat sauce (similar to
Ragù alla bolognese ) was known in Germany under the name
Pasta asciutta (sometimes also corrupted
Pastaschutta or
Pasta Schutta ).
